A garden wedding run like a restaurant: one kitchen in the field, one service standard, every guest served on time.

01The place

The place

A private garden in the Quito valley. A timber pergola, a canopy, a lawn — and no kitchen.

A set table: grey plates, folded linen napkins, carved glassware and woven placemats.
02The challenge

The challenge

Build a full hospitality operation for one day in a place that was never designed for one.

Three cooks in red aprons serving from a line of chafing dishes.
03The approach

The approach

Ceremony, reception, buffet, dessert and music designed as one sequence, then reverse-engineered into stations, staff and timings.

A dessert table under a tree with a layered cake and petits fours.
04The operation

The operation

A field kitchen behind the hedge, a hot line of chafing dishes, a brigade in red, and a run sheet timed to the minute.

A cook plating food from chafing dishes at the line.

05 — The experience

Guests remember a beautiful afternoon. They never saw the kitchen. That is the work.
